Lactation Cookies and almost 37 week bump. :)

Topic : Daily Glimpses

This week has been HOT.

I mean HOT…like 100 degrees and above.
And it’s September.
Gross.

So I stay inside as much as possible, which means I try to get ready for the baby…today I baked.

Cookie. Bump. Witchy looking hands. Yikes.

I have been wanting to make Lactation Cookies for awhile now, I don’t really cook but I do like to bake so making these is something I can do to prep before little miss gets here.
I am planning on breast feeding and I know that means I’ll need more calories and why not get extra calories from yummy cookies?
And these cookies have tons of chocolate chips, raisins and walnuts…
All the good stuff.
I do love a good loaded cookie.
: )

I found the recipe here.

There are two recipes at that link and both have great ingredients like flax, brewer’s yeast, and oats.
I went with the second recipe because I liked that it had applesauce, and 3 cups oats, which for me means fiber….which really does make the world go round. 🙂

Lactation Cookies Recipe- documented and ready to go!

I have created a binder with the recipes I make so I write all of them out.
Takes some time but I now have room to scribble my modifications…which I do make on most things I attempt to bake!

I did make a few changes to the original recipe…
Like with all recipes at the house I substituted gluten-free flour for the regular flour the recipe called for.
The original calls for 1/2 cup melted butter, which is a stick, I changed this and used 3/4 of a stick of butter.
I also changed the amount of agave used, the original calls for 2 cups and I used 1 1/2 cups and thought the cookies were plenty sweet.

Here are some of my supplies…

Ingredients for goodness

I use mostly organic ingredients when I bake and I also buy mostly organic for every day eating but I am a fan of things that are on sale…and the Nestle Toll House Chocolate Chips are on sale this week.
And I personally think they are the BEST chocolate chips EVER.
I’m sure this is from childhood memories but they are real good. By the handful. Anytime. 🙂

I’ll do an action shot for you, not very exciting but I was so giggly to use applesauce that I did document it!
Lame.
I know.
: )

Applesauce and Oats…fiber heaven.

And here’s the final product…

Momma’s Milk Cookie Goodness

This recipe makes a lot of cookies so we now have a freezer full of milk making support.
I do think that the cookies are good even if you aren’t wanting them for milk production.
Travis liked them and gave the suggestion of getting some ice cream to make some ice cream sandwich cookies. Yummy.

I can’t say on if these will increase my milk production, it can’t hurt…and I do feel like I am being proactive so that counts!

Here’s my bump baking shot, I did put on my new sweater for the picture (I think I’m trying to will cooler temps to come our way!).
Got it from Old Navy, on sale, non-maternity and I think it’s gonna get worn a LOT.
Good layering piece and it can hide the post-baby pooch. Awesome. 🙂

Baking with Bump at 36 almost 37 weeks!

We keep getting ready for the baby’s arrival, I have a pile of clothes/supplies for the bag to take to the hospital and her room is pretty much done.
I’ll post about both of these soon.
All very exciting yet very hurry up and wait….
Sigh.
